Expanding dietary department responsibilities, such as those outlined in accreditation standards, emphasize that an essential part of good patient care includes appropriate nutritional care. In the current atmosphere of cost containment, nutritional care must be cost effective. Because many smaller health care facilities cannot or will not employ a full-time registered dietitian (RD), many of the routine daily responsibilities for nutritional management fall to dietary technicians and dietary managers. A well-trained dietary manager or dietetic technician, under the effective supervision of a dietitian, can provide valuable, cost-effective service to a health care institution.
